Ingredients to make Pork Carapulcra:

 Small pig dams

 1 onion

 4 cloves of garlic

 Aji panca or special

 Ground peanut

 1/4 kg of dried potato

 1/4 of sublime chocolate

How to make Pork Carapulcra:

A day before, let the dried potato soak in water. Chop the onion into squares, mince or grind the garlic and remove the fat from the pork pieces. Rinse dry potato in water and strain.

In a pot with oil, season the onion, garlic and pork pieces until golden brown. Take care that the onion and garlic do not burn.

Add the ground peanuts and special chilli pepper, mix everything.

Add water and the sublime chocolate, mix and boil the Peruvian carapulcra for 5 minutes.

Add the dried potato, salt to taste and add a little water, mix and cook the pork carapulcra for 15 minutes or more until the pork is cooked.

Tip: Move constantly to avoid burning the bottom and add water if necessary to prevent it from thickening.
